  • Heat oil in a large saucepan over medium heat. Add shallot and cook, stirring, until starting to brown, about 2 minutes. Add tomato paste, garlic, salt, pepper and cloves; cook, stirring, for 30 seconds. Add apples, tomatoes, vinegar and sugar. Bring to a boil over high heat, then reduce heat to a simmer. Cook, stirring occasionally, until thickened, about 30 minutes. Let cool for 20 minutes, then puree in a food processor until smooth.
